Chocolate Keto Fat Bombs

What are fat bombs?

Ketogenic fat bombs are small snacks or treats that are high in fat and low in carbs (so, literally a fat bomb) that you can eat as a quick breakfast, as a quick mid-afternoon snack, as a pre- or after- workout snack, or as extra fuel during your day. -Keto Summit

I like to use fat bombs as snacks or to even out my macro percentages. Fat bombs are also a good excuse for a tasty treat. One day last week my percentages were off and I wanted something chocolaty. I looked at some fat bomb recipes but decided to experiment. The result was tasty fudgy chocolate fat bombs. Better yet, the recipe is very simple!

Recipe


  • 1 stick of butter- softened
  • 8 oz cream cheese- softened
  • 1/3 cup sweetener...I use stevia.
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder

Like I said, this is really simple. All you do is mix all the ingredients together. Letting the butter and cream cheese soften first makes this much easier. I prefer to use a hand mixer but it can be mixed by hand as well. That's it! You can eat it right away or let it set in the fridge to make it fudgier.

The recipe makes 13 servings. Each serving is 1oz.
Carbs: 2g
Protein: 1g
Fat: 9g

Fitness Friday: Finding What Works

I have blogged on this topic many times. When it comes to weight loss you just have to find what works for you. It's different for everyone....heck I think it's different for everyone at different points in your life. I have found something that works for me for now. Right now, that's the Ketogentic Diet, Keto for short. Keto is fairly simple. You keep your carbs under 20g a day. The rest of your diet is mostly fat with moderate protein. That's it! Simple. But Simple doesn't always mean easy. Giving up carbs is tough in this carb rich world we live in. The first week was hell but it has gotten easier....quite a bit easier. I started the Keto diet at the beginning of last November and in those 2 months I have lost 18 pounds and 2+ inches from my waist (plus because I didn’t measure till a month in)!! I'm pretty stoked about that! I have a Facebook group for anyone on the Keto diet or anyone interested in the Keto diet. Come join us if you'd like! Ketogenics "Anonymous"

So, What do I eat??? I have been tracking my food on the You Ate app (the link brings you to my log). Most of the time I keep it simple. The first picture is breakfast recently: bacon, Gouda and coffee (with stevia, heavy whipping cream, and sugar free Starbucks vanilla syrup). Second picture is little smokies wrapped in bacon. Yum!!


As I got use to the diet I started trying recipes that made foods Keto friendly.
Flourless Avocado Brownies: These are just amazing. I added sugar free chocolate chips to mine.
Green Bean Casserole: I changed up the linked recipe. I took out the dried onions and the soy sauce. I added crumbled bacon and used more cheese.

Keto Pancakes: These are so simple and so good! 2 ingredients: egg and cream cheese....that's it!! One of the times I made these I added a splash of vanilla extract and a little ground cinnamon. Butter and Swerve confectioners sweetener is amazing on top!

Monday Musings {10.17.2016}

  • Scouts: Watching Sean grow in scouts has been awesome. He has really come out of his shell. Maddy is in her second year of scouts and I'm seeing the same thing happen with her.

  •  Yoga: I've skipped my daily yoga this past week...oops.... I can definitely feel a difference. I need to get back on track.

  •  I've finished a crochet project for myself: this yoga mat bag. My next one will be this Dream Catcher vest: the question is do I use the same colors or change it up??

Egg Muffins


These aren't really muffins like you think of when you think muffins; there's no flour. What there is, is egg, sausage, cheese and spinach. These would make the perfect make-ahead breakfast when you need something on the go. Though I admit that I haven't tried to reheat them; they were such a huge hit with the kids (mine and daycare) that there were none left!

Here's the recipe for 12 muffins:
Ingredients:
  • 8 eggs
  • Fresh chopped spinach
  • Cooked sausage - crumbled (I bought the already cooked sausage crumbles)
  • 1/4 cup milk
  • 1/2 tsp baking powder
  • 1/2 tbsp veg oil
  • Shredded cheese (I used cheddar)
  • salt & pepper to taste
Directions:


  1. Preheat the oven to 375 F
  2. In a skillet cook the spinach
  3. Spray muffin tin and cover the bottom of each cup with sausage.
  4. Spoon in the cooked spinach on top of the sausage. 
  5. In a bowl whisk together the eggs, milk, baking powder, oil and salt & pepper.
  6. Pour egg mixture into each cup.
  7. Sprinkle cheese on top.
  8. Bake for about 15 minutes.

Weekend Recipe: Pumpkin Nutella Muffins

I'm all for any recipe that includes pumpkin. Mix pumpkin and chocolate...I have to try it! These muffins smelled wonderful while baking and tasted very delicious. However, there could have been more pumpkin flavor for my liking. The recipe can be found here.

What you'll need:

  • Pumpkin puree (not pie filling)
  • Vegetable oil
  • Eggs
  • Vanilla
  • Brown sugar
  • Sugar
  • All-purpose flour
  • Ground cinnamon
  • Ground ginger
  • Nutmeg
  • Baking powder
  • Baking soda
  • Salt
  • Cocoa powder
  • Nutella

Weekend Recipe: French Toast Bites

A day late because of computer problems but better late than never! Yesterday morning we had French Toast Bites for breakfast. Yum!! My kids are not big breakfast eaters but they scarfed this down! We made a little mistake and didn't let the bread go stale first. This made the bread more soggy than it should have been but didn't effect the taste. The recipe can be found here.

The ingredients:

  • Buttermilk (We made buttermilk with almond milk and vinegar.)
  • Milk (We used almond milk)
  • Vanilla extract
  • Salt
  • French bread

Weekend Recipe: Pumpkin Chocolate Chip Cookies

Hello fall!! Time to start baking with pumpkin again! I love most things pumpkin so when I saw this recipe I knew I had to try it. The cookies had a different texture to them; almost cake-like. Boy were they good! This recipe makes a lot but they were still gone pretty quickly.

Weekend Recipe: Banana Nut Chocolate Chip Oatmeal Cookies

PhotobucketWhew! What a name! They are oh so good though! Earlier this week I was searching for a recipe. I really like Quaker Breakfast Cookies but I thought I could make healthier and cheaper breakfast cookies. I found a recipe that sounded like it fitted the bill. And they do! These are some seriously delicious cookies! I wanted some chocolate in them so I cut back a little on the walnuts and added some chocolate chips.

  • Flour 
  • Baking powder 
  • Baking soda 
  • Salt 
  • Cinnamon 
  • Butter 
  • Sugar 
  • Brown sugar 
  • Egg 
  • Ripe banana

  • Quick oats 
  • Chopped walnuts

Weekend Recipe: French Vanilla Creamer

PhotobucketOne morning earlier this week the kids woke up earlier than normal so I thought I'd have a cup of coffee. Then I remembered we had to throw out the creamer that we had because of Irene. I really wanted that cup of coffee though. So I made my own creamer.

Ingredients:
  • 14 oz Sweeten Condensed milk
  • 14 oz Milk
  • 2 tsp Vanilla extract 
I stored the finished product in a old sauce jar. I just can't seem to throw out glass jars.

Weekend Recipe: Cheesecake Brownies

Just the other day, I was craving cheesecake and looking around pinterest. Usually looking at pinterest while hungry is not a good idea but this time it was. I found several pins where people combined cheesecake and brownies. Cheesecake and chocolate!? Could it get any better!? I had to try it! And that's just what I did today.

You know you want to try it too so here's what to do:
Combine the ingredients for your favorite brownie recipe and your favorite cheesecake recipe in separate bowls. I was a little lazy this time and used a brownie mix. Pour the brownie mixture (saving about half for later) into a 9x13 cake pan. Add the cheesecake mixture on top of the brownie mixture. Dollop the remaining brownie mixture onto the cheesecake mixture and gently swirl it to create a marble effect. My little helper got a little over zealous with the marbling so it kind of disappeared in places. But that didn't effect the taste! Bake at 350 for about 40 minutes. Cool before serving.

Weekend Recipe: French Breakfast Muffins

Like the author of the blog where I found this recipe, I have no idea why these are call French Breakfast Muffins but I do know they are good!!

The ingredients:
Muffins:
  • 1/3 cups Melted butter
  • 1/2 cup Sugar
  • 1 Egg
  • 1 1/2 cup Flour
  • 1 1/2 tsp Baking powder
  • 1/2 tsp Salt
  • 1/4 tsp Nutmeg (I still haven't bought nutmeg so I used cinnamon instead)
  • 1/2 cup Milk
Topping:
  • 1/2 cup Sugar
  • 1/2 cup Melted Butter
  • 1 tsp Cinnamon
I normally don't have a helper when it's early in the morning but this time I did.

This recipe is smaller than most muffin recipes I've made. It only made 8 muffins. ...8 muffins that were gone in no time. Though, I could have not filled the muffin tin so much.

Weekend Recipe: Blueberry Crumb Bars

What an easy dessert!

The ingredients:
  • 1 cup Sugar
  • 1 tsp Baking powder
  • 3 cups Flour
  • 1 cup Shortening
  • 1 Egg
  • 1/4 tsp Salt (optional)
  • 1 pinch Ground cinnamon (optional)
  • 4 cups Fresh blueberries
  • 1/2 cup Sugar
  • 3 teaspoons Cornstarch

The recipe says that the dough would be crumbly. It sure was!!

I also learned that you should be very gentle when pressing it into the pan. The places that were pressed harder were very hard after being baked.

Other than the hard bottom layer (which was my mistake, not the recipe's), it was very good!! I plan on trying this again with other fruits.

Weekend Recipe: Trail Mix

I have a tendency for my blood sugar to drop (hypoglycemia) and it's worse when I'm pregnant. So, when I'm pregnant, I try harder to eat well and to eat often to avoid problems. Healthy snacks are not as easy as meals, especially if you're looking to keep your budget under control. Today I decided to make some trail mix that I could munch on between meals.

I didn't use specific quantities of these ingredients. I just eye balled it.
  • Dried blueberries
  • Almonds
  • Walnuts
  • Granola
  • Chocolate chips (dark chocolate would have been best but I went with semisweet)
