Egg Muffins


These aren't really muffins like you think of when you think muffins; there's no flour. What there is, is egg, sausage, cheese and spinach. These would make the perfect make-ahead breakfast when you need something on the go. Though I admit that I haven't tried to reheat them; they were such a huge hit with the kids (mine and daycare) that there were none left!

Here's the recipe for 12 muffins:
Ingredients:
  • 8 eggs
  • Fresh chopped spinach
  • Cooked sausage - crumbled (I bought the already cooked sausage crumbles)
  • 1/4 cup milk
  • 1/2 tsp baking powder
  • 1/2 tbsp veg oil
  • Shredded cheese (I used cheddar)
  • salt & pepper to taste
Directions:


  1. Preheat the oven to 375 F
  2. In a skillet cook the spinach
  3. Spray muffin tin and cover the bottom of each cup with sausage.
  4. Spoon in the cooked spinach on top of the sausage. 
  5. In a bowl whisk together the eggs, milk, baking powder, oil and salt & pepper.
  6. Pour egg mixture into each cup.
  7. Sprinkle cheese on top.
  8. Bake for about 15 minutes.

Weekend Recipe: French Toast Bites

A day late because of computer problems but better late than never! Yesterday morning we had French Toast Bites for breakfast. Yum!! My kids are not big breakfast eaters but they scarfed this down! We made a little mistake and didn't let the bread go stale first. This made the bread more soggy than it should have been but didn't effect the taste. The recipe can be found here.

The ingredients:

  • Sugar
  • Cinnamon
  • Eggs
  • Buttermilk (We made buttermilk with almond milk and vinegar.)
  • Milk (We used almond milk)
  • Vanilla extract
  • Salt
  • French bread
  • Butter
  • And of course real maple syrup

Weekend Recipe: Banana Nut Chocolate Chip Oatmeal Cookies

PhotobucketWhew! What a name! They are oh so good though! Earlier this week I was searching for a recipe. I really like Quaker Breakfast Cookies but I thought I could make healthier and cheaper breakfast cookies. I found a recipe that sounded like it fitted the bill. And they do! These are some seriously delicious cookies! I wanted some chocolate in them so I cut back a little on the walnuts and added some chocolate chips.

The ingredients you'll need are:
  • Flour 
  • Baking powder 
  • Baking soda 
  • Salt 
  • Cinnamon 
  • Butter 
  • Sugar 
  • Brown sugar 
  • Egg 
  • Ripe banana 
  • Vanilla extract 
  • Quick oats 
  • Chopped walnuts
